Roasting The Bird

Wednesday, October 28, 2009 by cn.co.dc

Weigh the bird after stuffing. Spread butter or oil over the skin, the season with salt, pepper and lemon juice. If liked, cover the breast with overlapping rashers of fat bacon. Place the bird on one side in a roasting tin, on a rack if you have one.
A covering of foil certainly protects the oven but it isn’t necessary with the slow method of roasting (except to protect the legs and breast from over-browning if the bird is a large one). However foil is a must with high temperature cooking. Either wrap the bird loosely in foil or make a “tent” by first placing the bird in the roasting tin then covering it with a sheet of foil, pressing the foil down well around the edges of the tin. Turn the turkey on to its other side half way through cooking.
Remove the foil and baste about half-an-hour before the end of the cooking time, to allow the skin to become golden brown and crisp. If necessary, raise the temperature to hot, Gas Mark 7 or 425degree F/220degree C.
